Grewia asiatica fruit is known as Phalsa or Falsa in Urdu and Hindi. Phalsa has lots of benefits and nutrition value. The fruit is commonly grown in Pakistan, India and Asian countries like Bangladesh, Nepal and Thailand. It is one of local cooling fruit in Asian countries, famous for cooling effects as well as for various other health benefits. The fruit has antioxidant properties, good source of vitamin c ,fibre calcium, sodium  and phosphorus. The fruit protects from sun radiations. Falsa could be eaten raw or sprinkling some salt and black pepper on the fruit. Phalsa juice is also very tasteful and People n nlove to drink sharbat phalsa or falsa. Indian people also love Phalsa kulfi to beat summer heat and sunstroke.

Phalsa berries are  small reddish purple fruit with seed insides it and has sour and sweet taste .All part of falsa tree are usable .The Phalsa grows during the peak summer months of May and June  yearly .

Ingredients 

Phalse                                                   250 grams (1 ½ cups)
Water                                                   ½  litre
Sugar                                                     50 grams
Ground cumin seeds                             a pinch
Black salt                                              ½ tsp or to taste
Lemon juice                                       ½ lemon small
Ice

Preparation of Sharbat e Phalsa


First of all wash Phalse and soak them in water. Leave it for 15 minutes and grind it after grinding strain with strainer and remove seeds from juice. Add ground cumin powder, sugar and black salt and to the mixture. Mix ice in the Phalsa juice and juice is ready adding few drops of lemon juice and serve chilled drink.

Recipe of Cardamom drink or Homemade Sharbat Elaichi recipe

Sharbat e Elaichi or Cardamom Drink is very beneficial in summer season. with lemon juice it gives very unique taste and flavor while green color attracts eyes. 

Ingredients

Cardamom (elaichi/Ilachi  pod ): 50gram                               
Sugar: ¾ kg
Green Food Color: a pinch
Water: ½ kg
Lemon: ½ kg

Recipe:

Make cardamom (elaichi/Ilachi) powder. Cook cardamom powder in water until water remain half. Now add lemon juice in that and strain the water with strainer or cloth. Add sugar in the water and cook again. Cook the water and sugar on slow heat and stir frequently. When water started thicken, preserve the mixture in glass bottle or jar. You can enjoy cardamom drink by adding 2 tbsp of syrup in one glass water. Mix sugar and ice as your taste.

Sumac drink belongs to Indian, American, Lebanese, Middle Eastern and Persian culture.Sumac is a reddish/velvet coarse spice and has tangy flavour. The herb had some good nutrients including Ascorbic Acid (Vitamin C) and Malic acid. The plant contains Calcium malate, Iodine, Gallic-acid-methylester, tannic Dihydrofisetin, Fisetin and gallic acids, Selenium, Tartaric-acid, and other beneficial minerals. Sumac is healthy and nutritious, and it’s used in folk medicine as well as modern medicine. It had Low calorie, reduces fat and carbohydrate. Mostly Sumac is used as a spice. Sumac fruits mostly used as a tonic to improve the appetite and it treats diarrhea. Its berries are astringent, Blood Purifier. They were chewed as a remedy for bed-wetting. Sumac aids in reducing fever. Sumac is good for arthritis, respiratory problems such as bronchitis, colds, skin inflammation, and flues.
Sumac juice is used to relieve stomach upset. A tea made from the berries has been used to treat sore throats.” Its seeds are effective against Aspergillus’s fungus which causes lung infection and other organs infection. this herb ripens in summer and people dried it and ground it to produce the spice. you can make an excellent and quite refreshing drink that’s just like lemonade but its casually called “Sumac-Ade.” you can drink it with grilled fish, Zaatar (wild thyme herbal mix), grilled meats and salads etc. here I am just going to share sumac tea /Sumac ade or drink recipe

Sumac-Ade

Ingredients: 


ü      2 cones of freshly picked Sumac
ü      2 cups of fresh cold water

Sumac-Ade Preparation:


Chose ripen sumac, ripen sumac has a dark velvet color. Avoid taking Sumac cones immediately after rain since it tends to wash away the flavor. Remove small Sumac berries from the stems and place them in fresh cold water. Crush the berries with your hands for a couple of minutes, or you could alternatively put the mixture into a blender and let it blend away. Leave them in water about one or two hour depending on how strong of a flavour required. Now strain it by a cheesecloth mix sugar as per your taste. Drink is ready to serve cold with ice. Avoid hot water to prepare Sumac drink.

There are many other names of Sumac like: Elm-leafed Sumac; shumac ;gewürzsumach (German); Sicilian sumac; summaq (Arabic); somagh (Farsi); sommacco (Italian); kankrasing (Hindi);  soumaki (Greek): sumaq (Hebrew);; sumac (French), Somak (Turkish); zumaque (Spanish).

Badam pisin(Almond gum) Recipe:-

Ingredients:

Badam pisin/Almond Gum                    5g
Milk                                                     250 ml
Cardamom powder                              a pinch
Sweet sliced Almonds                              4
Water                                                   150 ml
Sugar                                                   as desired or as per taste

Recipe

badam pisinGet Badam pisin or Almond gum ( Badaam gum) and divide Badam pisin in small pieces. Soak Badam pisin (Almond gum-Badaam gum) in water for full night. In large mixing bowl soak Badam pisin or Almond gum because it increases in volume.
Badam pisin will become jelly like it in morning or nearly become like crushed ice. Now remove water and wash little inflexible jelly badam pisin three times.
Boil milk on low heat with sugar and cardamom until milk remain half in level. Cool it in refrigerator then add washed Badam pisin (Almond gum) garnish with almonds pieces. almond gum or badam pisin has cooling effects and health benefits on the other side badam pisin is very tasty drink.

Ingredients:

Gond Katira/Gum                     5g
Sweet sliced Almonds                 6
Water                                       150 ml
Sugar                                       as desired or as per taste
Milk                                         250 ml
Cardamom powder                   a pinch

Recipe:-

Get gond katira and make small crystals of gond katira. Soak gond katira in water over night. Take large bowl for soaking gond katira because it increase in volume.
In morning gond katira will become jell like it nearly looks like crushed ice. Now drain water and wash this little stiff jelly two or three time.
Boil milk with sugar and cardamom until milk remain half in volume. Cool it in refrigerator then add washed gond katira garnish with almonds slices.
